Town officials gathered at Qdoba last night for the blue-ribbon opening of Lexington's newest Mexican eatery.

The store unofficially opened last week and is already filling tables – and plates. Last night’s Grand Opening, held at the Bedford Street eatery from 6 to 8 p.m., was organized by Chamber of Commerce Executive Director Mary Jo Bohart and Qdoba management.   

Once the ribbon was cut, everyone was rewarded with an enormous pork, chicken or beef burrito, each filled with rice, beans, cheese, guacamole, sour cream and/or salsa.

Bohart said this gives residents, students and office workers another quick and healthy option. Those who opt for a table rather than takeout can “watch the world go by.”

Fire Chief John Wilson said it gives his crew another meal choice – especially in this hot weather when no one feels like cooking. And it’s convenient. If he’s looking for his crew, he can peek out his office window across the street.

According to Qdoba Regional Manager Cathy Heng, this is the 19th store in Massachusetts. Qdoba started in the 1970s in Denver, Colorado.

What does Qdoba mean? An Internet search yielded two answers: One said it's made up and doesn't have any ethnic origins. The other said it's an ancient Navajo word, "Que dobos," and means house of food.

Mmmmm. Yes, house of good food.
