2 eggs

3 Lemons

¼ c. olive oil

Cut cheese into square or rectangular ¼ inch slices. Beat eggs.  Dip cheese into eggs and flour. Place in a frying pan filled with heated olive oil that covers the bottom of the pan. Fry cheese to a golden brown on both sides. Warm another frying pan while you are frying cheese. Place fried cheese in the second pan when cooked. Pour rum over the fried cheese and light with a matchless lighter. Let fire sizzle out and remove saganaki (cheese). Squeeze lemon juice over saganaki and serve
