A Berry Good Cake Recipe

Looking for an easy recipe to use up the berries in your fridge? Here is a great one for you to try.

Pancakes, muffins, cakes, desserts and of course the old standby, just popping them in your mouth. One of the true joys of summer is a bowl of freshly picked blueberries and strawberries. I picked up a few too many berries last week (I couldn't help myself) and was searching for a cake recipe to use up the rest of what I had in the fridge. There are a lot of great recipes out there but the one I settled on definitely turned out to be a keeper. It had the consistency of a pound cake, which I love. We're jumping in on Week 4 of an "On the Farm" feature that highlights the goings on at local farmstands, mostly in Concord.

In Week 4 of our "On the Farm" series, we take a look at what's going on at some local farmstands. Blueberries at Hutchins Blueberry season is finally here and the folks at Hutchins Farm on Monument Street are picking the popular berries all week. Blueberry season should last until mid-August, Hutchins farm manager Brian Cramer said. Berry lovers should call the farm in advance to make sure that the berries are ripe enough for Hutchins to be picking that day. If so, blueberries should hit the farmstand at around noon. Pick them up quick before they sell out! And while you're at Hutchins, cucumbers are also in season, making it the perfect time to make your own pickles, Cramer said.
