PHOTOS: Qdoba's Grand Opening

The Mexican chain's new location on Bedford Street held its official grand opening and ribbon cutting ceremony on Wednesday, June 20.

  Town officials gathered at Qdoba last night for the blue-ribbon opening of Lexington's newest Mexican eatery. The store unofficially opened last week and is already filling tables – and plates. Last night’s Grand Opening, held at the Bedford Street eatery from 6 to 8 p.m., was organized by Chamber of Commerce Executive Director Mary Jo Bohart and Qdoba management.    Once the ribbon was cut, everyone was rewarded with an enormous pork, chicken or beef burrito, each filled with rice, beans, cheese, guacamole, sour cream and/or salsa. Bohart said this gives residents, students and office workers another quick and healthy option.
